Most bentos fail at the rice. Either too wet, too dry, or — worse — yesterday's batch reheated.
We use Niigata koshihikari, soaked for 30 minutes, drained, then steamed at a 1:1.1 water ratio. Every portion is weighed to 220g for a standard box. The fish or meat is the headline; the rice is the stage.
